Salmon Spread

When spring comes to the Virgin Islands, our thoughts turn to ... Parties! It's racing season in the Caribbean, and that means lots of visitors - old friends to catch up with and new friends to make. We all enjoy happy hour at sunset, which means having plenty of nibbles on hand. My Salmon Spread uses simple ingredients and is easy to make ... Great for sharing with friends!

Ingredients ...

1 14-oz. can of salmon, drained and skin removed (leave the bones in for calcium)

10 oz. goat cheese, softened

Several dashes Cajun-style hot sauce

1 teaspoon Summer’s Secret

Juice of half a lemon

Freshly-ground pepper

Stuff you'll need ...

Food processor, or heavy-duty mixer or blender

Directions ...

Place all ingredients except lemon juice in food processor or blender; blend until smooth. If the mixture is too stiff, add a little of the lemon juice. Refrigerate for a few hours or overnight. Freezes well.

Serving Suggestions ...

Serve chilled, with a bit of Summer’s Secret Seasoning and freshly ground pepper on top for decoration, with crackers or bread (yummy on pumpernickel); use it to stuff celery; or thin it out with a bit more lemon juice and use it as a vegetable dip.

Healthy Tip ...

Serve on toasted bagels for breakfast … Goat cheese is lower in fat and cholesterol than cream cheese.
