Bite-sized mini-pizzas for a crowd!
4 cans Pillsbury Buttermilk Biscuits (10 ct)*
80 pepperoni slices (2 per biscuit)
40 slices Cabot Cracker-Cut cheese slices (use your favorites)
Parmesan cheese, grated
Summer’s Secret Seasoning
1 jar pizza or marinara sauce
*If using your own pizza dough, each piece should be 2.25 grams.
Stuff you'll need ...
Parchment paper (optional)
Large cookie sheet
Small dish for olive oil
Pastry brush (or cheap paint brush)
Saucepan for pizza or marinara sauce
Pre-heat oven to 425 degrees. Line your cookie sheet with parchment paper, or lightly grease with olive oil.
This is an assembly line operation, so it is easiest to get everything out and ready to go before you start to put the Party Bites together.
Unwrap the pepperoni slices, separate, and put them on a plate.
Using a piece of pepperoni as a guide, cut off the corner of the cheese slices. Save those little cheese triangles for later!
Flatten and slightly enlarge each biscuit and stack pepperoni and cheese on top (pepperoni/cheese/pepperoni).
Fold the edges of biscuit around the meat/cheese stack, and press the edges together.
Line the bites, seam-side down, on the cookie sheet, sides touching.
Brush the tops of the Bites with olive oil.
Sprinkle with Parmesan cheese, Summer’s Secret Seasoning, and granulated garlic – quantities are up to you.
Did you save the cheese triangles? Good! Place one triangle on the top of each Bite. If I use different cheeses, I use the triangles to indicate which Bite has what type of cheese. Save any leftover cheese to put in your scrambled eggs the next morning.
Bake for 16 to 18 mins, until tops are golden brown. While the Bites are baking, warm the pizza sauce.
Serve with warm sauce for dipping.
