Summer's Secret Low Fat Cheese Dip with gluten-free crackers

This recipe is an adaptation of my uncle's Boursin Cheese recipe. His recipe is yummy, but with cream cheese as a base, it could stand to lose some calories. I experimented and came up with this recipe. I took it to a party and didn't tell anyone the cheese spread was made with fat-free cottage cheese until after they had eaten all of it!

Ingredients ...

2 toes raw garlic or roasted garlic, for a more mellow flavor

1 16-ounce container of fat-free cottage cheese

1 teaspoon Summer’s Secret Seasoning

Freshly ground pepper, to taste

Few dashes hot pepper sauce

Pinch of salt (optional)

Accompaniments ...

Assorted crackers

Carrot and/or celery sticks

Stuff you'll need ...

Food processor or heavy-duty blender

Air-tight refrigerator container

Directions ...

Place all ingredients in food processor or blender, and process until smooth. Taste and correct seasoning; you may need that pinch of salt. Scrape spread into an airtight container and refrigerate for several hours or overnight.

Serving Suggestions ...

Spread on crackers or use as a dip for raw vegetables. This is also nice on a baked potato.
